I use the harness in the second link for my two. I've had it for years and years. In the beginning I fastened it on their chest to work on pulling but since then it's always fastened on their back. It doesn't damage their fur and allows more control and is much safer than a collar IMO.

Arthritis is common and can be eased with a variety of pain meds and supplements. At his age comfort is the priority I would think. Hip dysplasia is also common. Has he ever been x-rayed? Ligament issues, spinal issues. Many things could be causing this. A good orthopedic vet would be my next visit....

I tried that with mine when they were babies. When I had to leave I would leave him in the master bath with a pee pad. He never once used it or peed on the floor. He held it. Was he checked for worms at the vet? That is a possibility. He could also just be stressed. Did you change the food or continue what the breeder was feeding?

I'm not sure if that is a full chow or not. I will say that you are not suppose to clip a chow's hair. Double coated breeds will shed their under coat as appropriate and their coats insulate them from hot and cold temps.

Neuter yes, but there is some thought out there that waiting until they are a year old is best. Hormones, growth plate stuff. Is he house trained? My question is why is he confined in the kitchen when you're gone and when you're home sleeping? I assume he is trying to get out and/or showing his frustration. Chows like to be near you, guarding your door for example.
