I'm not extremely knowledgeable - except for what I've read regarding pure breeds and what is preferred.
Almond eyes are slanted like Asian eyes and are the preferred in Chow-Chow pure breeds. They are referring to the shape of the eyelids. My chow had entropion surgery to eliminate her eyelids from turning in and her eyelashes from scratching her cornea. So now her eyes are more rounded as a result of the surgery. Previously they were almond shaped.
If you read some of the required specifications of a champion or pure-breed you'll find that any alteration or eyes that are not almond-shaped are not looked upon as a desirable quality. In my opinion I'd love my Sheena if her eyes were square.
Hope this answers your question.
