The chow back on dog food.

Hello,
Me again!... I don't know if you are aware of my situation but just a recap... Chow 11months had bloody poop so had to put him on a chicken and rice diet till he got better. Its been a week now and he is doing fine so I am trying to transition him off of pure chicken and rice.
When the little guy was on the chicken and rice diet everything will be gone and he would lick his bowl up, literally. Yesterday, I picked up a bag of Orijen (blue buffalo wasn't doing it for him) and mixed it with some beef and white rice, he ate it after 2 attempts at the bowl. This morning 8AM I gave him kibbles+chicken+eggs and he ate a few bites and never ate it again. I put on some tough love and wont let him get anything else till he finished it but he would refuse. I had to feed him from the palm of my hands at 3:45PM b/c he hasn't eating anything the entire day. I was hoping experience chow owners can shed some light on this...
1. Should I put him on a rice and chicken diet or its really unhealthy since its missing other nutrients?
2. Would chicken + white rice + kibble be too fatten for him?
3. How come he can eat the kibble out of my hand but not in the bowl. He sees it coming from the bowl too!...
4. I would always mix his kibbles with other items (egg, meat, yogurt. et al) prior to his incident and he would eat it majority of it. Why is he putting up a resistance?
I think that will be all but any feeding tips will be greatly appreciated.
