Can you train a chow chow to poo in the bathroom?

My cousin and I are attempting to teach his chow chow (Mimi) to use the bathroom/shower floor in his apartment instead of grass downstairs, which the dog is already used to. He still takes the dog for a walk when he can (2-3 days a week when his girlfriend is over to help), but he can't afford to do it twice a day everyday anymore. He was hit by a car, and can no longer walk. While he was in recovery, I took Mimi home with me. So I offered to adopt her for good because we have a lot of room for a dog, and he almost bit my head off that I even suggested that. There are no dog walkers where we live (the entire country), his girlfriend can only be there on the weekends to walk Mimi, and I'm an hour and a half away from him so I can't be there everyday. I'm only going to be staying with him for a month and a half more until I have to return to my home, and he can't come live near us because of work/his girlfriend.
Any tips on how to train Mimi to use the bathroom area?
What I have been doing for almost a month is waiting for signs that she wants to go potty, and then taking her to the bathroom and standing by the door so she can't go out until she does her business. She refuses to poo no matter how long she's in there. It takes her about 30 minutes to 1 hour to finally start peeing. I was losing all hope that this would be possible until today, when she went in the bathroom ON HER OWN, and peed. I think I teared up a little because I was so happy lol. She still won't poo though so I'm not sure what to do. Should I keep doing what I'm doing? Should I wait longer than 2 hours so she's forced to poo? (I eventually bring her down to poo if it's been more than 7 hours of no poo). Any advice would be great.
